Gluten Free Blueberry Muffins

In one smaller bowl.....
4 eggs
1/2 cup sugar
1/2 cup butter
2/3 cup milk (cow, almond, coconut, soy, etc)
2 teaspoons vanilla

In a larger bowl....
2 teaspoons baking powder
1 teaspoon xanthan gum
1-1/2 cups gluten free all purpose baking flour
1 teaspoon salt

Mix small bowl mixture into large bowl.  Stir well.  Add 1-1/2 cups blueberries.

Preheat oven to 375 degrees
Bake muffins for 30 minutes or until done

Gluten Free Pancakes

Beat together the following...
Two eggs
Two Tablespoons oil
One teaspoon vanilla
One and half cups of any type of milk (cow, soy, coconut, almond, goat)

Mix the following in another large bowl...
One cup brown rice flour
One cup gluten free baking flour
One teaspoon salt
1/8 cup baking powder
1/8 cup sugar

Mix the liquid mixture into the dry mixture
Add another bit of milk until it is the right consitency

Allow the batter to rest for a couple of minutes while the pan heats

Use oil or they will stick

I prefer small pancakes dipped in syrup and butter melted together

Porkchops with Apples and Onions

Brown pork chops in large skillet in a thin layer of oil over medium-high heat
Add salt and pepper
Peel and slice three apples
Pees and slice one onion
Pour two cups of broth over chops
Place apples and onions on top and continue cooking until broth boils
Reduce heat to medium until chops are cooked through

Millet and Asparagus

Two cups water with one teaspoon salt in large frying pan
Heat on high heat until boiling
Add 2/3 cup rinsed millet
Reduce heat to medium
Cook for 10 minutes
Add washed asparagus on top of millet - do not mix in
Cook for 10 more minutes
Let sit for five minutes and drizzle with EVOO

Fabulous Burgers

One Tablespoon Salt
One Tablespoon Oregano
One Tablespoon Parsley Flakes
1/2 teaspoon pepper
Two Tablespoons Worcestershire Sauce
One small chopped onion
One egg
1/2 cup oats
4 - 6 ounces crumbled feta cheese

Mix together all of the above in a large bowl

Add one pound hamburger and two pounds ground turkey

Mix all together, form patties, and grill until internal temperature reaches 160 degrees

Gluten Free Biscuits

This is originally the Betty Crocker recipe for Baking Powder Biscuits that has been modified to be gluten free...

1/4 cup butter
1-1/2 cup gluten free all pupose baking flour (Bob's Red Mill)
1/2 cup brown rice flour
1/2 tsp xanthan gum
2 tablespoons sugar
3 teaspoons baking powder
1 teaspoon kosher salt
3/4 cup coconut milk

Mix all ingredients except flours and milk.  Cut the flours into mixture with hands until holds together when pressed.  Mix in milk.  Knead on floured surface.  Flatten and cut into biscuits.

Bake in pre-heated oven at 400 degrees.  NOTE:  the biscuits will not brown. Bake for 10 to 12 minutes.
